How a delayed flight through Chicago turned into a gourmet popcorn shop in the heart of Weslaco.

The Layover That Started It All

Returning to Texas from Chicago, a delay at Midway Airport put Norma Melendrez in front of a gourmet popcorn shop — and she couldn't stop thinking about it. With limited resources to go on, she reached out to commercial machinery manufacturers, learned production basics, and trained in the craft herself. She and her husband Rogelio bought specialty machines — for movie-style, gourmet, cooker, and blender popcorn — and brought the whole operation home to Texas.

Ike's Gourmet Popcorn opened its doors on August 16, 2016. Early batches involved a lot of trial and error — including plenty of burned popcorn — as Rogelio and Norma refined their recipes for gourmet “mushroom” popcorn: a rounder, sturdier kernel prized for holding coatings and staying fresh longer than standard butterfly popcorn.

Named for Isaac — “Ike” to His Friends

The shop is named after the owners' son, Isaac — “Ike” to his friends at school. It's a fitting name for a business the whole family runs together: from mixing and coating to packaging and the counter, Ike's has stayed hands-on and family-owned every step of the way.

What began with four flavors — caramel, yellow cheddar, white cheddar, and a sweet-sour fruit mix — has grown into more than 35 varieties, most of them born from customer requests and a lot of kitchen experimentation.

A Valley Business, Shipped Around the World

Ike's serves the Rio Grande Valley from its home inside Wells Market — but the reach goes further. Orders have shipped as far as Japan and Sweden, including care packages for U.S. soldiers stationed overseas. “We're grateful to our local community and to everyone outside the state who's supported us,” the family says.
